- 100 g quinoa
- 150 g spinach leaves, chopped
- 2 tomatoes, deseeded and chopped
- 50 g Omiros Organic Feta Cheese, crumbled
- 30 ml olive oil
- 30 ml fresh lemon juice
- 60 g honey
- 50 g mustard
- Salt, pepper
Rinse the quinoa in plenty of water for several minutes.
Drain well, put it in a small saucepan with water and boil for 30 min. Drain the quinoa and let it cool.
Chop the spinach leaves into thin strips.
Place all the ingredients for the dressing in a bowl and whisk them with a small wire.
Mix all the ingredients of the salad with the dressing. Serve immediately.
